I chose to display a module on all pages and applied it, but now I've changed my mind. When I un-check  "Display Module on all pages" found under the Edit Settings>Module>Advanced Settings area it does not remove the module from all the pages. I have to go through and delete the module on each page separately.

 Is there a quicker way to delete the applied module from showing on all pages?

Also, when I go to apply the "Display Module On All Pages," is there a way to apply it ONLY to the NON-Administrative pages?

once you removed the module from one of the target page, unchecking "display on all pages" may fail to remove the other tabmodules. You may delete the tabmodules using SQL, by using a statement like "DELETE from TabModules where moduleId = 1234 and tabid <> 77", giving that your moduleId is 1234 and the id of the original tab is 77.
