We own a dedicated server at Godaddy that the site runs on.  We are using their mail server.  Both are in the same NOC in Arizona.

Dave, one more idea then. Few years ago we had VPS at the one company and had problem similar to yours. Problem was with providers limits. Provider made some limitations on SMTP traffic to prevent bulk mail sending. So when someone posted message at the popular thread at the forum, we had real delay. It has been fixed when we went to another provider. Can you check with your provider too? May be they have the similar limitations?

Otherwise it needs deep digging to find source of problem.
