Any account created via the provider should be in the portal as DOMAIN\username regardless if the default domain is setup or not. It's setup this way for situations where the portal is in mixed mode and allows registrations from non-domain users to make sure there's no username collisions.

What you're describing is exactly the way it's supposed to work and I'll need to check out why it's not happening (if I can recreate it).
