I am wondering what is the most stable version of DNN currently that you suggest to use.

I think that 7.0.2 is pretty good, based on limited experience as it's rather new.

The most recent version of 6, too.

I'd love to hear contrary views if I'm missing something.

Most versions of DNN are stable but you should start with DNN 7x.
