Hi, everyone! I'm new to DNN and my current job. We currently have DNN version 05.01.04, and I want to update it to the current version (07.00.05). MY questions is, how does the upgrade work? Will I lose all my data and current configuration? Would it be better to do a clean install and go from there? Any help or suggestions are much appreciated!

You shouldn't lose your data, but you should verify that you backup the files and database beforehand

Check out the Upgrade wiki for various ways to perform the upgrade

Do yourself a HUGE favor and make sure your site is backed up before attempting any upgrade. We see a lot of posts about upgrades gone wrong and there's not always a backup.
