Does anyone have knowledge of whether the install folder folders should have any left over files in them once the DNN upgrade runs to completion? (IE module and provider) Upgrading to 7.2 the upgrade sees zip files from previous upgrades (7.0 - 7.0.5) and errors out in the process. Can I delete all these old files without causing a problem before I copy in the new upgrade files

reagarding /install subfolders, .zip flies in subfolders get installed automatically on upgades, while .resources files are proviced for manual install lateron.
It is a known bug, that those files from previous Versions don't get handled properly anymore during Upgrades - I suggest deleting them manually prior to unzipping upgrade package for a newer Version.
