The tag you use needs to match the tag you registered it with.

I don't understand what that means :)

That is my question what should I use if dnn:MENU is wrong to use?

And there is no 'ton of documentation' or I can't find any.

it's not the dnn control you should worry about, it's that the menu you linked to doesn't work in IE11 so I would choose different markup to base any menu you develop against.

As to your other question, Richard is correct, you use the tag you registered with i.e.

 if your menu is defined as <%@ Register TagPrefix="dnn" TagName="MENU" src="~/DesktopModules/DDRMenu/Menu.ascx" %>'.

then you need to use dnn (as that's the tagprefix).

Finally, I'm also not sure what you mean by lacking documentation - the page I linked http://www.dnnsoftware.com/wiki/page/... has a user guide, a reference guide, guides to all 3 options for templating and various other links. Short of writing your menu for you I don't know how much more is needed.
