I manually installed DDN 7.02 creating an empty Database with Managment studio anc modifying the web config

Try to instal a new one with the microsoft installer it doesn't find the instance of the server searching .^\sqlexpress instead of the working one Myname\sqserverexpress.

Secondly I lost the password of the ID SA to manage the server, can i modify it with managment studio ?

if you are posessing another SQL admin account (usually the machine or Domain admin), you should be able to reset sa Password using SSMS. Select the account at > Security > Accounts in the tree on the left.
I assume, MS Platform Installer is relying on Defaults, I would download install packakge from http://dotnetnuke.codeplex.com, create a blank database and SQL Server account with dbowner permission granted for it. You also Need to create a Website in IIS (using a .Net 4 App Pool in integrated mode and a Directory (e.g. inside inetpub with write permission granted for the IIS App Pool user)
