since ddr menu became part of the core in dnn7, I been upgrading our dnn from v4.9.5 to 7.3.4 since at some point I have to uninstall ddr menu, so it can be installed again by the upgrade. Im curious if by uninstalling the ddr menu module will remove anything from the pages in my site?  or if its safe to uninstall since when it gets re-installed everything will keep working as before?

anyone knows?

I would switch to default skin prior to the uninstall and upgrade process.
Unless you are using DDR module (not skin object), uninstallation should not have a negative effect on your site - besides the menu won't work until it is re-installed.
