If the host has set a limit you can also choose to cache to disk. BTW, my site takes about 900 MB Ram for the worker process and SQL takes about 2-3GB.

1.5-2GB is what my SQL is using also even during the night when 0 activity is going on.  Is there any way to tell SQL to free this memory automatically - at least - during the night, and without restarting the service?

SQL Server will use as much memory as it can get it's hands on. 
It will also release some automatically if other apps need it.
This is a good thing.  Free memory in a system is wasted memory.

My provider has a limit on my site from 100MB when I get over it I get the message Service Unavailable.

I used no 3D part of DNN module and I am the only user at the moment.
Is this normal that it used more than 100MB of memory?
I never had this problem when I used DNN 4.0.3.

Set caching to disk and all your problems are over.
