I think the easiest way to describe it would be a series of check boxes displayed for one row which the user could pick more than one option and it would display as such.  Is this possible?

yes, this is possible by defining a boolean value for each check box - unfortunately there is no visual grouping, you might use a custom XSL style sheet for this.

After review of the UDT documentation and searching the project forum I still need some help with this.  Can you please provide an example of how I can create a UDT column that will allow multiple selections?

Simon, a single Column can only hold a single value - you need to create multiple columns and group the fields visually using a custom XSL style sheet.
