if you want to edit portal email address, check the portal admin user specified in Site Settings and modify the email address of this user in Admin > User Accounts.

i must have missed something......I see where the [Portal:Email] is in Languages but I can't see where to change the default email address of the portal in DNN7. I went to admin user in Admin > Site settings module, but don't see the email address here. Can anyone advise?

Again: you need to edit the email address inside the User Account of the Admin, selected in Site Settings.
