I also set the number of working processes to 1, but to be honest, this was not needed because setting the cache setting to "no cache" did work.

I would advise against this.  I have seen portals not be able to start at all if there isn't any caching.

If you have more than one working process, should the user not get back to the same working process due to the session he/she is in?

No, process or session affinity would be something that IIS would have to manage , and a web garden is just a poor mans way of increasing performance and reliability. 

A web garden can be configured to have CPU affinity, but that won't help if you are running on one CPU.
