Is there a document or has anyone created a document that lists all of the product tooltips, help text and etc. that comes with the product so that it could be translated or changed before putting it into the product?

Since DNN is such a live product there's no (simple) way to get what you ask. But you don't really need this since all the items that need to be translated can easily be seen on the language editor (menu Host > Languages).
