I recently intalled the lastest version of DNN on a Dual P4 Xeon 2.8 GHZ- 2GB RAM and 500 GB data Xfer and and separate database server with the same configuration and the site runs very slow with a few users on it.  Is there something I can do to have the site Cache or optimize for response?

there are several factors determing the response time - number of modules installed, server configuration, caching settings. Is it slow on first access or for users with edit permission only?

It is slow in both cases.  Is there a guide on how to best configure my servers, caching, etc.?

Try to use this ping utility http://www.smartertools.com/Products/SmarterPing/Default.aspx

Ping: www.yoursite.com\keepalive.aspx. about every 10 min or so.  this will keep your site loading fast after it has been idle.
