Personally I've had no problems with OpenID. As for you questions, A user profile is not altered, it is merely associated to an OpenID at first login. So you would login with your OpenID for the first time, it will ask you to either associate the OpenID with a current account in the website, or create a new user.

Your second question about the profile properties, yes, you can still make certain/all profile properties available/manditory just like a standard login.

I would ensure that when you are enabling OpenId that you set the return URL to be the Login page.  That was something I missed with my LiveId integration (Since it had not been documented anywhere...)  I hope that helps.
