Our web forms are being returned as if sent from an old admin contact.
and I'm not sure where to change this.
(so all our web form enquiries look as if they have come from the same (old) admin email address - which appears in the 'From' box).

I thought it would be in Host settings >> host email, but this did not make a difference.
I then changed the email address of the host superuser account but this didn't work either.

we are, however using Form and List module, so not sure if I need to change in FnL settings or in DNN settings (looked in both and can't find where to change it though).

A lot is going to depend on your configuration, but you might look at the e-mail address that is associated with the "Administrator" for the portal.  (Under Admin -> Site Settings)
