I was just wondering what skins come with the community edition install.

Only a single skin comes with the install, it is somewhat similar to what is shown on this site (as of 4/20/2010) and is called Minimal Extropy. If you want more, you can locate 25 from the Community -> Skinning contest page (which display winners first, but links to another page with all 25).
