I had installed the professional 30 day trial of DNN on my server and I did get it working.  I was wondering how I change from that trial version to the open source community edition so I can start making some actual production websites.

Amanda you can download DNN Community from here: http://dotnetnuke.codeplex.com/ It would require a new install, or consider purchasing DNN Professional.

there is no support to migrate from Professional to Community Edition.
