To upgrade DNN to latest version should I upgrade to all versions up to the last?

For example, if I've DNN 7.2.0 can I upgrade directly to DNN 7.4.0 or I must upgrade to  7.2.1 then to 7.2.2 then to 7.3.0 and so on until the last version?

From DNN 7.2.0, you should be safe upgrading to 7.3.4 or 7.4.0 directly.
Don't forget to start with a backup of all files and the database.
There are a few bugs reported if using DNN in international context with default language other than en-US and on sites with deleted site having PortalID = 0.

In principle you can go from v.any to v.anylater. In practice seriously large jumps often bring problems. There is a recommended path on the wiki for large jumps.

Yours do not count as large jumps. The standard advice applies. ALWAYS backup the DB AND the files before an upgrade just in case something goes badly wrong.
