i have set up clients site on a subdomain of my website - but need to move it to their webhost for final release. How do i go about doing this?

you can only move installations, not single portals. Before moving a portal, you need to add the destination URL as additional portal alias (or add it afterwards directly in the database). Create a copy of your installation, move it to the web server and remove all other portals.

These are procedures we have been using for with our clients, you may have to adjst depending on what your webhost can or cannot do. This a quoted from our KB article http://support.ihostasp.net/Customer/KBArticle.aspx?articleid=48

If you have an existing DotNetNuke portal on another host or your local PC and you wish to transfer it to be hosted on our servers, please follow these procedures:

1) Upload all DNN files to \wwwroot directory using FTP, you must make sure that no errors occur during the file transfer.

2) Make a backup or request your existing host to make a backup of your MSSQL database. Upload backup copy of MSSQL database to /db folder using FTP client.

3) Open a support ticket and request database restore. Make sure you specify the file name of the MSSQL backup file.

Our support staff will restore your database and make sure everything is working correctly. In some cases we might have to edit your database in order to modify invalid portal aliases, which may delay this process. In any case, it is our goal to make any host transitions very quick and pain free.
