On 3.2.2, I have changed the "Admin" email address, under the Admin Tab > User accounts.  But this does not work. I cannot find the correct place to change the address that would show up in the "From" field when a new user gets email notification?  

Also, is it possible to notify more than one email address when a new user registers?

Check to see what user is assigned as the admin for the portal under Admin > Site Settings.

If you login as that user and change the e-mail on the profile it should do what you want.

No, you can't have it notify two different addresses.  A work around is to use an address that is actually a list which most e-mail servers will let you create.
