An email notification is sent to the e-mail address of the Admin account every time a new user registers on the site.

I am really not interested in receiving these notifications, but I can't locate where to disable them from being sent.

Can anyone give me a pointer to where I would do this?

Try a little magic, from what i unserstand these email templates can be modified, so in the template that sends to you add the words < PLEASE DELETE > at the start of your email, then on your email rules set a rule to look for < PLEASE DELETE > in the body and have it move that email to the recycle bin. ( use a test folder to move to first to check it all works.

I also having trouble modifiying the registration email template.

Can anyone please elaborate on where to find the registration email template?

If you want total control over the registration process, including emails, role addition, redirects etc, check out the ucanuse module www.ucanuse.com. I have been using it for years and with fantastic results and the support is even better. It integrates well with the core profile too!.
