We have a DNN site and would like to allow visitors to the site to submit documents in .doc format.  I don't know what module is best to do this with.  Some guidance would be appreciated.

I'd suggest you take a look at the repository module (take a look at the docs also). You can even setup moderation with this module, which I think it's the common thing when you enable uploads to all users.
