After encountering the no default language error, I added a default language "English (Australia)". Now most of the text on the website has disappeared. For example, there are no login, register or logout links. In the admin menus I can't set anything as the words apply etc are not there. Please help!

you need to add "English (US)" without fallback as system language

if you have other languages installed, you may disable it for your site.

 I am unable to add or change anything to do with languages. 

I go to Admin -> Languages and the layout is a bit messed up so I'm not sure what to click. Can you provide a direct link to the page where I can add English (US) without a fallback please?

Hey Adam,

I just did the same thing - if you go to Admin > Languages, then select the Edit Language, even though most of the text is missing, I still had the Red X icon - which I hit, and that removed English (Australia), then I could add English (US) as the only option. All my text then appeared again.
