This seems like it would be a built in function of most modules, but I am not seeing how to do this. This is pretty straightforward in many CMS, but DNN doesn't seem to have this ability. All I need is a summarized list for different modules. For example, I would like to display the 5 newest documents that have been added to a document module, and have a "see all" link to the entire list. Or, I would like to show the most recent changed wiki pages and link to the wiki page.

Please let me know if I am missing something or if this requires the modules to be customized in some sort of way, but I am not seeing this as a built in function or the core modules I am using.

the old what's new module offers some of this functionality, but only for modules that implement the core search feature. You can download the module here: http://dnnwhatsnew.codeplex.com/Release/ProjectReleases.aspx?ReleaseId=21162

you can limit the modules covered by search index (and hence showing up in "What's New") using USearchModules from EckTwo, which can be downloaded for free at www.dnnportal.de.
