After clicking on the update link I now get the following messages on all my portals...

500 - Internal server error.  There is a problem with the resource you are looking for, and it cannot be displayed.

I see a file named "GlobalResources..Host.resx" with today's date.  Is the file suppose to have back-to-back periods in the filename?  Anyway this file isn't in my backup copy (back up was 4.x) and have upgraded to 5.x   

I had no idea that editing a text field can bring down my entire site.  I need to be more careful, and backup more frequently.

How do I go about getting my portals up and running?

no, that's not a valid file name - custom resource files typically include the culture e.g. en-us or/and a portalid (if specific to a portal rather than host). I suggest you remove that file (back it up) or rename it to something safe such as globalresources.txt. I suspect the double period is causing the localization code to choke. As to why this happened, I've not seen it before - it may be just "one of those things" i.e. the app pool recyled half-way through a file save.
