Some people over here think DNN is strangely quiet. They wonder whether DNN is sending the new account/password info to new users and even wonder what is/should be communicated when a new user is created. I could easily reassure them everything is working just fine, if I could show them what is going on, which e-mails are sent out. Is there any kind of logging (other than the company mail server's log) which shows which e-mails have been sent out by DNN?

At first glance there doesn't seem to be logging of outgoing messages, I can't find anything in the UI except the event/log viewer, nor anything in the database suggesting an email log.

Check you email server logs - that would be the best place.  DNN does not log every message it sends - the database overheads in doing so on a large site could be enormous.
