I am setup as an Admin but not seeing the "Host" menu option.  How do I add myself to Super User tr change my account so I could see the "Host" menu?

The easiest way is to login as a Super User, edit your account, and click the button to make you a super user.

You can do this directly if you have access to the database.

How do I login as a Super User if I don't have the password?

If you don't have the password, you can't login. That's the whole purpose of passwords!

Now, somebody should have the superuser account and password. They would be able to make you a superuser.

As I said, without that you'll need direct access to the database. Look in the users table for a field named issuperuser and set that to 1 for your account.

If you don't have access to the database, you'll going to have to find someone with the appropriate credentials.

There are some other tools available if you have access to the server and file system hosting your DNN install.
