Hi

what is the easiest way for a novice to change the color from red to a custom color when the mouse hovers over the menu items?

I believe (not near any of my notes) that the element you want to change is in the skin.css file:

.MainMenu_MenuItemSel {
color:#00FF00;
}

That should make the hover color bright green.
