is there some setting someplace on the host or admin tabs for changing this or, should I just rename my icon to dotnetnuke fav icon? Anyone?

The default favicon is used unless there is one in the root of the portal folder, you can upload r one through the file manager as administrator

to avoid publishing that you are using DNN you might delete /logo.gif, /dotnetnuke.ico and /favicon.ico.

Would deleting the original logo.gif and replacing it with your chosen pic and calling that logo.gif work?

sure - but not a good idea, it might get overwritten during upgrades.
