How do you remove all ecommerce functions (buttons, prices, etc...) from the store but still allow you to turn all of them on/off when you want to?

I hope I understand the question and am correctly answering it.  All of the UI items that you see when browsing the "catalog" are placed there via the store template system.  If you want something in a different way or want to remove something you can simple alter the existing template or create a new one.  As for the gateway, it is plug and play so you can simple create one that does what you want (like save items to your history) or simply not implement on at all (so it is a browse only experience).
