At this place in a future version (not the very next 'official' one), you will be able to enable/disable some address fields. Previously, the used address provider was hard coded and it was not possible to change the address provider without make changes in the code. This is a small improvement for admins, but a MAJOR one for developers! Now you can create your own address provider and use it without change the core code and it allow you to be able to upgrade with future versions WITHOUT loose your changes.

1) i looked to the DB, but haven´t found country list. But I found dbo.Store_Addresses and there are all collums used in billing address. Should I delete anyone? :-) Or can i choose which fields will be requied and which not?
I saw the Lego´s checkout page and it´s DNN Store too! https://shop.lego.com/Checkout/Address/
They have they field "Company" which i would add to my shop too.

2) I don´t know if it´s not my local problem, but when I´m logged in as HOST and go to store admin nad click some link above (in this module), everything is hidden and ... there is nothing.
Ex.: When I click Store admin in menu (regulary), im redirected to Store info admin - this address:
http://localhost/dnn11/Admin/StoreAdmin/tabid/62/language/cs-CZ/Default.aspx

But when I click Store info link in the top of this module, im redirected to this address and there is nothing...:
http://localhost/dnn11/default.aspx?tabid=62&pageid=storeadmin&language=cs-cz

Have you got any ideas?

and last question. When I can´t add or remove fields, i can rename them in resource file, So in place of evening phone i can write company - am i right?

And now let´s go to Store Account module -> Order history -> Details. There are all information about order. Could i change order of lines in billing address?
