No one else has done something similiar to this?

I can't speak about UCanUse module as I have not used it.  I am currently using DataSprings Dynamic Registration module and so far I have been able to accomplish some complex registration scenarios.  You can add as many entries as you would like with the Dynamic Questions setting of the module and you can map these questions/fields to the core dnn profile fields.  You would first need to set up the core dnn profile fields via the Manage profile fields option in dnn.

The module also has a multitude of choices for completion events (add to role/remove from role/redirect/send email, etc) based on the user's response to the dynamic questions.

I'm not sure, but I believe it will also handle the image gallery request.
