I'm totaly new to DNN... We're thinking of using DNN for a few of our sites. Currently, we have a fairly traditional process where site changes are first made on the Development site, then once the changes are tested/approved, they are moved to Production.

How does DNN handle this?

DNN is dynamic so there are no code changes required to change content.  So changes you make on the site are reflected on the site after update.  There is no built in Workflow yet, thats coming this year.  You can roll your own by using the View permission on a module and only allow authed people to see it until its ready for the site.

If you are talking about writing modules or skins then your approach is correct.
