How do you remove an entry in the Control Panel drop down list for Module?

You need to uninstall the module from the Host/Extensions page

Modules can also be hidden from the dropdown on a per portal basis. Login to the portal as Host and on the Admin>Site Settings. Under Advanced Settings-Host Settings you will see the "Premium Modules" section.

... and there is a 3rd option, if you want to hide it for non-admins only, you may revoce publish permission in Admin :: Extensions module.
