Hi,

I am new to DNN and try to figure out some basic things.
How can registered users write content in a specific category and how can I add categories?

I would like to build some kind of content publishing website. Users should register, write articles in their chosen category and I review and approve/publish them.

you need a module, supporting categories with specific permissions or need to use an instance per article module with appropriate permissions (per role) being setup. I wouldn't consider using HTML module for this purpose.

    You can try our Cross Article 7.5 module.  It is a dnn 7.x news article & blog module which allows multiple users publish their articles/blogs/listings, and also attach videos/audios/photos/documents with it.  Site administrator can create categories/attributes, and edit/manage/approve these articles/blogs/listings if necessary.
