Very new user to DNN - looking for Event Viewer best practices. What are some of the events that are recommenced to be turned for performance monitoring? What events are security related? How often do you clear the log?

Logs will clear itself according to the Settings - however, the more Events, you are turning on, the more often you will Need to check growth of EventLog and Exceptions tables in the database. Please check growth of ScheduleHistory table as well.
most of the Events are not Performance related, because there are factors, which are not covered by the Events: Database Transactions and Client side code.
For Security, have a look at the Security analyzer (in Admin Menu / Persona Bar).
