Hi, could you walk me though how to create a new package for an extension that is already installed so that one could modify the version numbers?

Modifiy My Project to the version you want, and modify the manifest file of the source.  It could be some difficult about the package creation, thats anything what way the original developer have done.  Also if the module was before a DNN 4.x Module you need a new manifestfile for DNN 5.x.

After installing extension, login as Host to site, then goes to Host->Module Defination. Then select the installed module edit option, then give version:
then click on Create Module package, check create manifest File option also can change the zip file name  then click on Create to create the new package. It is the same module package process, only need to give version number, different package name and check create manifest file option.
