Is there a way of sending rich text emails from the Events module?

sure, just provide a full HTML as template.

Amazine what a <p> can do!

PS:  Is there a way of finding out what fields are available for the email templates?  So far my guesses have been good, but my luck will run out

If you mean the Events tokens, you do not need luck, just a mouse to click on the link ""Templates help", which is visible under the label "Event Template;"' in the Templates Settings section of the settings.
