I've looked around, but wasn't having much luck. If our site is on DNN 5.6.1 can I upgrade right to the latest stable version - which looks like DNN 7.0.2? OR, do I need to move to version 6 first? Move to version 5.6.7, then version 6? 

Any help is appreciated.

You should be able to go straight to 7.0.2

Always backup your site/database first, and perform the upgrade in a test environment if possible
