At my company we are planning to have a seperate development and production environment for our website. Is it possible to update the complete site (not page by page via templates), instead of
-deleting the old one
-backup and replace the complete database
-import and setup the complete site again?

Having a dedicated site for module development, packaging the tested module and install in production is a recommended way of professional development.
On the other side, using a dedicated staging site for creating and maintaining your website content is currently not supported by DNN.
If you are just updating content of single pages, you may create a page copy, visible to editors only, update content, rename or delete (permanently) old page and rename new page to replace it. same might be done more easily on a single module or - with same effort, for a whole menu branch.

you are welcome. In addition, there are some module containing versioning and workflow, which might be another option for news etc. to prepare content.
