Hello,
I'm developing a conference room booking module. Is there anything out-of-the-box or using jQuery that already exists that would allow a user to drag and drop cell contents from one cell to another?

This to me would be a better user experience than selecting a new date and time for an event, but I could make drop down menus.

This not related to DNN but I would suggest to look into jQuery UI interactions (Draggable, Droppable, Resizable, Selectable, Sortable).

There is a nice article with simple demos on the subject. Towards the end there is a card game example which I think is great use of drag/drop capabilities. Much like what you are trying to do.
