Can anyone tell me how to set my repository (using the nifty template) to only show an image if one exists? Currently if there isn't an image it will show a place holder graphic.

you should be able to do it placing some javascript or jquery script in the footer.html template file.  The script would have to look at the images and if the src attribute matches the 'no image' filename then you could hide the image.  Obviously, jQuery would be much easier to use to do that.  Give it a shot. if you are unable to get it to work, let me know and I will work up the script for you
