I installed a language pack that I like, but, the calendar shows days of week as Monday – Sunday (Sunday as seventh day) but I want it Sunday – Saturday (Saturday as seventh day). I have tried to find it at the "Language Editor" but can’t find it. I’m using DNN 3.1 with the core Calendar and Event module.

I'm sorry but this is something you cannot change. The calendar popup will show the days according to the default starndard for the current culture/language (using  a call to DateTimeFormatInfo.CurrentInfo.FirstDayOfWeek). For example in en-US it will be: Sunday, ... Saturday. On es-ES it will be: Lunes, ....Domingo.

I don't understand you don't like it, since this is the default for the user selected language. If you don't like it maybe you should change your language to a more appropriate one.

So, what you are saying is that, it is the country or culture code what influences this? If so: can I change for example a es-ES to es-PR?

This is right, the calendar is displayed using the country default settings (as specified on the asp.net framework).
You can change your current language to different options and see how this changes.
