How do you customizing the layout of a blog? I've looked at the online documentation and couldn't find anything.

What kind of customizations are you interested in making?  Some style related customizations can be made by editing the module.css file (/DesktopModules/Blog/Module.css).  Other customizations require making changes to the ascx files in this same folder.  This article at DNN Creative may provide a good starting point for you if you're interested in making modifications at this level.
