Hi,

We have files (.pdfs and .docs) located on a separate server from DNN.  When we create our website, is there a way to access these files at the second server so we can place them on our website?

AFAIK you will need to refer to the files as either web folders or UNC paths. By default dotnetnuke expects files to be on the server or linked via http. I believe a module such as http://www.bring2mind.net/DocumentExchange/Version4/Features/tabid/163/Default.aspx may be a suitable fit.
