how do you change, modify the email address used by dnn to send notifications to registered users with they regsiter, changing of account info, etc?

That is controlled by the administrator account that you set up in the site settings under admin.

If you go to Admin --> Site Settings --> Advanced Settings --> Other Settings, there is a setting called administrator. Whichever accout you set in that field, DNN will use the address in that account as the "from".
