Is it possible to set a file as "private" so that only the submitter and Admins can view it?

If not, any ideas on how this could be acheived (another module, addition to this module, etc)?

Sorry, I can't think of a way to completely hide the items from others than the uploader and the admin. I've added that as an enhancement request for a future release.

Enhancement: Designate a repository as 'private' so that uploaders only see their own uploads but admins can see everyone's uploads. Possible use case: support site where users can upload files for support. They should be able to upload files to an admin, but not see other people's files.

The Private repository idea is a great one. I have several Accountants who would like to offer an easy way for their clients to upload their quickbooks files but of course can't have them visible to others. Thanks for putting this in the queue.
