Back to the subject of this thread - I must say that the emails sent out upon approval of a message are really ugly. Huge red blocks with blue link text and no real order. I hope that this is not the default scheme and that it is easily modified.

I have mildly modified this and should be visible since last week.  UI is a very subjective thing.  The point of the default themes are just like default skins with the portal, to get people going and for them to learn how to modify.  To change the email template, you would simply go into the Resources/_forumemail.xml file (I think, bit late here) and modify it.  You can add an entire new theme by copying one of the two existing nodes and creating your own named email template.
